Cardamom in your morning cup: why Sap & Spice belongs in coffee and tea

There's a moment every morning — kettle whistling, first pour hitting the mug — where a small addition changes everything. In our Vermont kitchen, that addition is a spoonful of Sap & Spice.
Why cardamom belongs with coffee
Green cardamom pods carry a bright, slightly citrus warmth that softens coffee's bitterness without covering it. Where sugar flattens, cardamom lifts. Where cream mutes, cardamom rounds. And because our syrup starts with real Vermont maple sap, you get a natural sweetness with body — not the flat spike of white sugar.
Coffee drinkers across the Middle East have been reaching for cardamom for centuries — a few crushed pods dropped straight into the grounds before brewing. Sap & Spice is that same idea, pre-infused into maple, ready to stir in with a single spoon.
Try it this way:
- Pour-over (12 oz): stir in ½ teaspoon of Sap & Spice after brewing.
- Cold brew: 1 teaspoon per 8 oz over ice, then top with milk or oat milk.
- Espresso: ¼ teaspoon in the cup before pulling the shot — the crema traps the aroma.
- French press: 1 teaspoon per 12 oz stirred in right before you plunge.
The house recipe: Vermont Cardamom Maple Latte
This is the drink we make on slow Saturday mornings. It takes five minutes and beats anything a coffee shop will pour you.
Makes 1 mug (about 10 oz).
Ingredients
- 2 shots espresso, OR 4 oz strong drip coffee
- 6 oz whole milk (or oat milk for a nuttier finish)
- 1½ teaspoons Sap & Spice Cardamom Maple Syrup
- A pinch of ground cinnamon (optional)
- 1 whole green cardamom pod, lightly cracked (optional garnish)
Method
- Pull the espresso (or brew the coffee) directly into a warm mug.
- Stir 1 teaspoon of Sap & Spice into the hot coffee until fully dissolved — ten seconds with a spoon.
- Warm the milk in a small saucepan over medium heat until it just starts to steam, whisking to build a little foam. Off the heat, whisk in the remaining ½ teaspoon of Sap & Spice.
- Pour the milk slowly over the coffee, holding back the foam with a spoon, then top with the foam.
- Dust with cinnamon and drop the cracked cardamom pod on top. Serve immediately.
Tips
- No espresso machine? Brew a small, strong French press (double the grounds, half the water) and use 4 oz.
- Iced version: cool the sweetened coffee, pour over ice, and top with cold-frothed milk.
- The syrup keeps its aroma best when stirred into the hot portion of the drink first.
And tea, especially chai
Cardamom is already the backbone of a good chai, so Sap & Spice slots in the way a jazz musician joins a familiar tune. For a quick chai latte:
- Steep 1 black tea bag in 6 oz of hot water for 3 minutes.
- Warm 4 oz of milk with 1 teaspoon of Sap & Spice.
- Combine, top with a light dusting of cinnamon.
For plain black or green tea, half a teaspoon is plenty. For herbal (rooibos, honeybush), a full teaspoon leans into the floral side.
A note on cardamom and digestion
Cardamom has been used for centuries after meals to settle the stomach — it's one of the reasons chai landed at the end of Indian meals long before it landed in coffee shops. That's part of why we started sweetening our morning cups with it: a gentler start to the day, and a soft landing after dinner.
